There are foods I love so much that I can’t help working them into my books. The character of Brooke Bonham, from my Solsti books, is an expert at breakfast items. Here are a few of her specialties!

Oven Dutch Apple Pancake

 

Nicole *tries” to make this in Wicked Waves, Chapter One:

 

“I tried to make your recipe for oven-baked Dutch apple pancakes,” Nicole said. “But, um, this is what happened.” She held out a rectangular glass baking dish that was filled with a soupy mixture of eggs, sugar, and floating apple slices.

 

Little sister Brooke to the rescue!!

 

4 eggs beaten

1 cup each milk and all purpose flour

½ teaspoon salt

½ cup sugar

1 tablespoon cinnamon

2 apples, sliced

¼ cup butter

 

Preheat oven to 375. Melt butter in 9 x 13” baking dish. Spread apples over bottom. Combine sugar and cinnamon and pour over apples. Combine eggs, flour, milk, and salt; beat until smooth. Pour over apples and bake for 30-35 minutes until set and puffy. Serve warm, cut into wedges.

 

Icing for Cinnamon Rolls

I LOVE this!!! And in Chapter 28 of Wicked Waves, Brooke and Kai get VERY creative with their icing. The icing got made, but never actually came in contact with the cinnamon rolls…

 

“I missed you.” He prowled behind her and wrapped her in his arms, hooking his chin over her shoulder. “What’s that?”
“Icing for the cinnamon rolls.”
“We’re all gonna get fat if you keep this up.”

 

3 cups powdered (confectioners) sugar

3 tablespoons milk

 

Stir together sugar and milk until smooth. Spoon icing into a zip-top plastic bag. Snip 1 corner of bag, and drizzle icing over warm rolls.

 

So easy!! Just combine slowly or you’ll have powdered sugar all over your counter. 🙂

 

 

Oven Omelet

 

I couldn’t work in a scene with Brooke making this, but I love this and it’s super easy!

 

 

6 slices cooked and crumbled bacon, or diced ham, or 5 cut up sausage links

Other items that you’d want in an omelet (baby spinach, bell peppers, mushrooms, etc)

1 cup shredded cheddar cheese

8 eggs

1 cup milk

 

Butter (or spray with non stick spray) a 2 qt casserole dish. Sprinkle cheese in. Add meat and vegetables. Combine eggs and milk. Pour over meat and cheese. Bake at 350 for 27-30 minutes.
